Experiences of the World Network of Mountain Biosphere Reserves
Meseta Iberica Menu – Km zero
Aware of everyone’s responsibility, the Meseta Ibérica Cross-border Biosphere Reserve aims to fulfil the central objectives of the ‘local food’ approach, promoting a better future by boosting the consumption of locally produced food and valuing gastronomy and traditional production techniques. This initiative promotes the sustainable management of energy resources and the reduction of the ecological food footprint, establishes direct links between producers and consumers, revitalises production, processing and distribution structures, and builds networks of relations between producers and entrepreneurs.
This concept is based on the constitution and promotion of a locally based food chain and on a policy of promoting the consumption of food from the region that contributes to sustainability and to the local economy. Km0 has the following principles:
- Sustainable management of energy resources and reduction of the ecological food footprint, reducing the energy required for food to reach its final destination.
- Food sovereignty and stimulation of local production, reducing the degree of external food dependence.
- Promotion of the local economy, stimulating work and economic circulation within a community and region.
- Preservation of biodiversity and protection of traditional production techniques, valuing local varieties and economic profitability in the choice of organic farming.
- Valorisation of traditional gastronomy through the supply of specific products of local origin and high quality.
